Listen. I don’t want to get into a tortilla debate here, but I think a large flour tortilla is probably one of the best delivery systems for breakfast you could ask for.

Inside, you also get some heavenly green onions and the almost mandatory bell pepper, which are perfectly fine with me.

Instructions

1. In a bowl of medium size, combine the eggs, milk, salt, and black pepper. Whisk together until you have a homogenous mixture.

2. Warm a skillet over medium heat and add the butter or oil. Once hot, add the beaten eggs and cook, stirring gently, until the eggs are just set but still soft. Remove from heat.

3. Place the large flour tortilla on a clean surface. In the middle of it, layer the scrambled eggs, shredded cheddar cheese, diced tomatoes, chopped green onions, and diced bell peppers.

4. Position the crisp tostada atop the stacked components.

5. Top the tostada with the cooked bacon or sausage.

6. Crease the tortilla you are using to make the wrap in the same way you would if you were making a tortilla for a taco. In other words, fold the edges of the tortilla up and over the center. As you do so, make sure to create pleats as you go, to fully enclose the filling and form a wrap.

7. Once more, heat the skillet over medium heat and with great care place the wrap, seam side down, in the skillet.

8. Prepare for 2-3 minutes on every side or until the tortilla is a beautiful golden brown and the cheese inside is thoroughly melted. Use a spatula to gently press the wrap together.

9. Remove from the frying pan, and allow to cool for a moment, then slice in twain.

10. If desired, serve warm with sour cream and hot sauce on the side.
